fish again?

Last night after I finished my blogging and shut down the computer I made my lunch for the next day as usual. There was a tiny bit of jell-o left in the bowl after I filled my little container so I took a picture of it so I could just finish it off. This morning, like most mornings, coffee, bacon and eggs.
Feeling a little tired what with working on a Saturday and all. Bought a coffee and had a morsel (about 1/4) of an Atkins bar.
Lunch was salmon salad since for some reason I didn't want any more tuna. I really must do more meal planning so that I can have a better variety during the week. Also featured were radishes, a little jicama and a couple of cauliflower florets.
I got a few groceries during my lunch hour. I was hoping for a small bottle/can of diet gingerale but couldn't find any, I did see a diet Dr. Pepper while waiting in line. I've been pretty thirsty lately - drank a large cup of water at breakfast and finished my litre of water before I started on the pop. I guess since the weather is getting warmer I need more liquid. Either that or it has something to do with all the fish I'm eating. Had the pop with 25g of cheddar cheese and 5 pepperoni tidbitz.
With no plans for dinner, I dug around in the freezer and figured the fastest thing to defrost would be seafood. Featured are 200g basa, 100g scallops, 80g shrimp, also some mushrooms and shirataki noodles (like konnayku only noodle shaped). At the top centre of the photo is a small bowl with a bit of celeriac. This ingredient spent the evening in the microwave and didn't make it into the mix.
I made a little white sauce with some cream, olive oil and xanthan gum to thicken it. A little garlic for flavour and we were very happy with the result. We made sure to have a good salad since dinner was so very white.
In spite of being spot on with carbs and calories I ended up having a pot of tea and the rest of the Atkins bar from earlier today. I'd like to say that tomorrow I'll have fewer calories but it's mother's day and I promised my mom a good meal. Monday then. My goal will be 1,500 calories or less four of the next seven days.
Total calories today 1,871, double yikes!

yummy new recipe

Working on a Friday, this is strange. Coffee, bacon and two eggs.Eep, someone left me in charge at work. I'm not fond of it at the best of times, but even less when it's a surprise. Guzzled my coffee and gnawed on some spicy salami Piller's Tidbitz for my break.
Lunchtime and oh, what a surprise, Tuna! Today at least I had the Gold Seal sliced tuna with ginger and 80g each of radish, jicama and cauliflower. I also had the less than appetizing other half of the avocado from the day before yesterday and sugar-free raspberry jell-o.
For dinner we tried a recipe from the book 150 Things to make with Roast Chicken. Chicken Florentine. Without repeating the whole recipe it involved: 10 oz leftover chicken, spinach, diced tomatoes, mozzarella, parmesan and a bit of garlic and oil. Threw it together in the skillet, 10 minutes in the oven and voila! Dinner.
I was suitable apalled when after entering all the ingredients into fitday, half of the recipe came out at 676 calories and 14 net grams of carbohydrates (damn tomatoes). I gave Doug a slightly larger serving with many more tomatoes. Luckily it was pretty late by the time we had dinner so I didn't need a snack this evening.
Total for the day 1,722 (yikes) calories and 30g net carbs.

more temptation at work

Coffee and fritatta for brunch. Spinach, mushrooms, 3 eggs and some cream cheese because I was too lazy to grate some hard cheese.Hot pot of tea welcomed me at work!Today was Andy's penultimate day at work. We had a lovely card for him and a table set up in the workroom covered in snackage. This was taken about half way through the day.

From the table of bounty I decided I would like to taste the Terra Red Bliss potato chips. Mostly because they were dried tomato and balsamic vinegar flavour. I picked one medium sized chip. It was nice but it didn't blow me away. At least I didn't crave more. Yes, in fact I can eat just one!

On my break I had some of the coffee I had brought in my thermos.
No tuna today! Here you see 68g of salami and the usual celery, radish and jicama.
Having had a light main I had two strawberries (56g) and a petite selection (82g total) of several cheeses. Left to right: brie, bresse bleu, smoked gouda and sharp cheddar.
As if that wasn't enough I ate the 35g of mixed nuts I had brought for a snack. I should have waited because I felt very hungry by the time I got home after 9pm.
Wanted something nourishing to keep me from having to go to bed hungry so had a hard-boiled egg and a big mug of chicken broth. Would like more but it'll have to do.
Today's totals (not counting the chip) 1,392 calories and 32g net carbs.

Riverdance in my intestines

I was dreaming about loosing my clothes in a ridiculously huge laundromat when I became aware that I had to get up and go to the bathroom. I had a badly upset stomach, cramps and wasn't at all interested in breakfast this morning. I did have coffee though...
I managed relatively well at my physiotherapy/exercise appointment even without nourishment although I did feel light headed a couple of times when working very hard. Came home before heading to work and quickly fried up a couple of eggs and had almost a litre of water.On the way to work I picked up an Americano.Tuna salad today and I remembered the avocado. The little bag of veggies included three radishes, about 70g of jicama and a chunk of cauliflower. Also raspberry sugar-free jell-o.All by myself this evening but I behaved and had 100g of the leftover pork roast (please finish it off Doug, I want chicken or something!) and 150g of cauliflower. I also made a salad - on the large side with a balsamic vinegarette.After dinner I added everything up in fitday and discovered I hadn't had much today, thought I'd treat myself to more strawberries and cheese. I made up this plate but that was actually too much, Doug ate half the strawberries and a third of the cheese.
My totals for today are 1,557 calories and 32g net carbohydrates.

fish heads, fish heads, roly poly fish heads

The day started innocently enough with some flax cereal and a cup of coffee.
A week ago last Sunday, Barry brought a bag of these little Piller's pepperoni tidbitz which are flavourful and very chewy - and therefore a satisifying snack. More fat and calories than a hard-boiled egg, but less than an ounce of mixed nuts. Go fig. And coffee.
Okay, here's where the fishyness begins. Last night in order to expedite the eating of a very ripe avocado I prepared tuna salad for my lunch today. Can you find what's missing from this picture? That's right! The avocado spent the day on the kitchen counter.
In the late afternoon I finished up my little thermos of coffee and had half a coconut Atkins bar. It was actually a little heavy, I had a touch of heart-burn afterward.
Got home and Doug had taken two big fillets of basa out of the freezer for dinner. We also had some green beans and a side salad. We've been paying a little more to get packaged Herb Salad. I really love the hit of dill and cilantro. Once the garden gets going I should be able to make my own.
As is frequently the case when we have fish for dinner I was noticeably hungry in only a few hours. Looking in the fridge I saw some lox trim that had lasted (ie not been scarfed down immediately) a surprisingly long time. I had about 50g of lox, 50g of cream cheese and four celery sticks which I assembled and ate over a period of 15-20 minutes. I still don't feel particularly full, but am satisfied. It didn't occur to me until I was weighing the lox that today had been awfully fish-heavy. Oh well.

1,643 calories and under 30g net carbs. Not too shabby.

end of my long weekend

Up early to head out to the cycle shop coffee and pbj since I don't have time to make eggs.
Mom looked after me while I waited for my wee bike. We had a couple of mugs of green tea.
Home again I was quite hungry and had no idea what to make for lunch so I snacked on 50g of mixed nuts and a big cup of diet ginger-ale.
Gave up on the thinking and made the bacon and eggs I didn't get for breakfast.
Another 30g of mixed nuts on my new toy - the nutritional scale. Not only does it weigh things much more accurately than the old one but it had codes for types of food so in theory I can weigh a serving of whole food (ie not mixed nuts) and it will tell me how many carbs, calories, fibre etc. etc. It's pretty cool.

Tonight we had a fish course before the meat. These little sole filets stuffed with salmon called to me from the fish case yesterday in the supermarket. We each had one and a half pieces, my portion weighed in at 100g of fishy goodness.
Dinner was leftover pork roast from yesterday. I sauted some cauliflower (100g) and heated up 150g of the pork. When putting together the plate I forgot we'd already had a course and discovered myself full in time to leave a little (45g) of the meat.



Several hours later I needed a little something (I've got to stop watching Iron Chef in the evenings it really sets me off!) so I had a pot of tea and half of an Atkins bar.


A little high today, 1,747 calories and 44g net carbs.

Yay! Scootering... well almost.

The first Sunday in seven months that I haven't had to work and was able to go to the SVIS (Scooters Vancouver Island Style) meeting. We met at the Black Stilt and I had coffee and a lovely visit with Deb, Carol, Rob, Rich and Andrew. However the day was quite cool with a solid drizzle so there was no actual riding done.
Before I left home I had a mug of coffee, bacon and eggs.





Afterward Doug and I headed out on our first regular day off together in the same seven months to do a really big grocery shop. We now have lots of good food in the house, all I have to do is get cooking.

In spite of the fact that we weren't at work all day I still used the crock pot and cooked our favorite garlic studded roast pork. I served it with a few sauted mushrooms and the regular side salad.







Because I somehow forgot to eat lunch I had lots of calories and carbs left at the end of the day and so we had a big cheese plate with strawberries. I had about half.
Clockwise from the front havarti, bresse bleu, smoked gouda, vintage cheddar and a lovely double cream brie. Yummy!

In spite of this bounty my count for today was 1,371 calories and 27g net carbs.
