Had a little break - now I'm back!

I'm kind of surprised myself. After only two weeks of eating take-out I'm sick of feeling bloated and gaining weight and desperately want to give this another go. Unfortunately the stressors that caused me to give up are still in my life - I still have the persistent sinus infection that seems to open me up to every cold bug that comes down the pike and we're still doing rotating strikes/job actions at my place of employment. Documenting what I eat doesn't actually take much effort but shopping for good food and cooking does. Let's see how I manage.

Started the day with coffee and two large eggs scrambled.
Before leaving for work shortly after noon I had a snack of a hard-boiled egg and a 47g chunk of cheddar cheese.
For my first break at work I had half a gala apple.
For "dinner" (my meal break is from 4-5pm) I had a salad of mixed greens, 5 cherry tomatoes and two sliced radishes with a ready-t0-eat tuna slice in curry sauce on top.
Dessert was 1/2 cup plain yogourt sweetened with sugar-free Torani syrup and the other 1/2 of the apple.
A nice big coffee so I could remain alert until the end of my shift at 9pm.
For my evening coffee break I had four little celery sticks filled with smoked salmon flavoured cream cheese (about 2 tablespoons).
When I got home I felt quite hungry (today was a big change from the enormous servings of restaurant food I've had the last week or so). I made a pot of tea and a recipe I learned years ago when I first started following a low-carb lifestyle. The flax bun is made from butter/coconut oil, an egg, 1/4 cup of flax meal, baking soda and something for flavour. This evening I used a packet of splenda, a teaspoon of cocoa powder and a pinch of chopped walnuts for a slightly sweet muffin substitute. Lots of calories but very low in carbohydrates and very filling.
Kept track in fitday again. Only 1,511 calories and 53 net grams carbohydrates. Let's hope I can keep it up.

Friday but not the end of my week.

Slept in this morning. Good, because I really needed it. Bad, because it didn't leave me enough time to go exercise before work.
Coffee.

Since I was making brunch I tried my omelet with asparagus and emmental again. This time it came out much tidier.


It was really hot and muggy in our workroom. For my break I went over to that coffee place and got an Iced Americano (basically espresso over ice - I added a little cream and splenda). It was really yummy and had few calories and carbs compared to all those whipped drinks they make.

Lunch was the easy tin of smoked tuna slices with ginger, a whack of celery, radishes and jicama. That huge pile of veg had less than 60 calories and only 6 net g. of carbohydrates. Also my favorite cherry jell-o.
I was actually getting hungry again at break time so had the 35g of old cheddar left over from my early break.


Usually a problem - I get home from work at 9pm and my stomach and head both expect a meal. Today with so few calories earlier in the day I pretty much had carte blanche to snack on whatever I wanted. I started with 20g of pork rinds and some diet ginger-ale then made myself a flax bun. This is a recipe I'll have to talk more about soon, but not tonight, it's late and I have to get up for work in the morning.

Totals for today 1,358 calories and only 23g of carbohydrates although some of the soluble fibre in the flax should count - that's for another post.

Started great, didn't end so well.


Woke up before seven. Would like to have slept in more but couldn't. Had coffee.






Some time later made a flax bun and more coffee for breakfast. The basic recipe I was taught is 2 tablespoons butter, one egg, 1/4 cup ground flax, 1/2 teaspoon baking powder and a pinch of salt. I modify it almost every time I make it. I generally use unrefined coconut oil 1/2 and 1/2 with the butter and add either some cheese when I want a savoury version or this morning I added about a tablespoon of chopped walnuts, a teaspoon of cocoa powder and a packet of splenda. It's a little like having a muffin. Certainly as many calories but few carbs.


After going to workout I stopped at home long enough to scarf down the left-over avocado half.


Around 4pm I was wanting something to tide me over until dinner (Doug home at 6:30) so I had a cup of diet pop and about 20g of pork rinds which had been languishing in the snack cupboard so long I was worried that they might be rancid. While not fresh they at least tasted okay.


Was feeling headachy by the time dinner rolled around and I thought it might be lack of food. We each had two hamburger patties (about 100g each before cooking) with cheese and a side salad. I also had eight stalks of asparagus done in the counter-top grill after the patties came out. They were very tasty with no additional oil/butter. Oh, and a dollop of mustard.



Even though I wasn't really hungry after a couple of hours and some pain killers when my headache had gotten worse I had some more diet cola and 10 brazil nuts. Now I know I could have managed without the nuts. I think they were mostly because I was feeling so lousy. In fact I really wanted to eat more and previously would have gladly polished off the bag. Minor improvement I suppose.
